Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • ¾ cup balsamic vinegar
  • ½ cup chicken broth
  • 2 tbsp honey
  • 1 tsp dried Italian herbs
  • 2 tbsp chopped fresh basil

Method

  1. Season chicken and sear in olive oil, 5-6 minutes per side, until internal temp reaches 165°F. Set aside.
  2. Cook garlic in the same skillet for 30 seconds.
  3. Add balsamic vinegar and broth, scraping up browned bits. Stir in honey and herbs.
  4. Simmer uncovered 8-10 minutes until the sauce coats the back of a spoon.
  5. Return chicken to the skillet and spoon glaze over it for 1-2 minutes.
  6. Rest 2-3 minutes, then plate and top with fresh basil.

Notes

Storage note: Refrigerate up to 4 days; freezes reasonably well for up to 2 months.
Notes: Reduce the sauce until it coats a spoon before adding the chicken back; don’t skip tasting along the way.
