Apple Crumble

A classic apple crumble with acrisp, clumpy oat topping, built around draining the apples first to prevent asoggy base.

Ingredients
  

  • 6 cups apples peeled and sliced (Granny Smith and Honeycrisp mix)
  • 1/3 cup granulated sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • 1 cup all-purpose flour topping
  • 1 cup old-fashioned rolled oats
  • 3/4 cup light brown sugar packed
  • 1/2 tsp cinnamon topping
  • 1/4 tsp salt topping
  • 10 tbsp unsalted butter cold, cubed

Method
 

  1. Toss apples with sugar and lemon juice, let sit 15 minutes.
  2. Drain apples in a strainer, reserving liquid separately.
  3. Toss drained apples with flour, cinnamon, nutmeg, and salt.
  4. Spread apple mixture in a greased 9-inch baking dish.
  5. Whisk together topping flour, oats, brown sugar, cinnamon, and salt.
  6. Work cold butter into topping mixture until coarse crumbs form.
  7. Scatter topping evenly over apples, without pressing down.
  8. Bake at 350°F for 40 to 45 minutes until golden and bubbling.
  9. Tent with foil if topping browns too fast.
  10. Rest 15 minutes before serving.

Notes

Storage: Refrigerate up to 4 days; reheat at 350°F for 10 minutes to recrisp. Freezes unbaked up to 3 months, bake from frozen with 15 extra minutes.
