Mississippi Chicken

Ingredients
  

  • 2 1/2 lb boneless skinless chicken thighs
  • 4 tbsp unsalted butter cut into 4 pats
  • 8 to 10 pepperoncini
  • 1/4 cup brine
  • 1 tbsp dried parsley
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp dried chives
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • 1 tbsp cornstarch
  • 2 tbsp cold water
To serve
  • mashed potatoes
  • rice
  • egg noodles
  • 2 tbsp chopped parsley

Method
 

  1. Spread the thighs in a 6 quart slow cooker and season both sides with the ranch blend.
  2. Tuck in the pepperoncini and set the butter pats on top.
  3. Whisk the tomato paste into the broth and brine and pour around the chicken.
  4. Cover and cook on low for 5 hours, until the chicken shreds easily and reaches 165°F.
  5. Remove the chicken and shred it with two forks.
  6. Stir the cornstarch with the cold water, add it to the pot, switch to high, and cover for 10 minutes until the gravy coats a spoon.
  7. Return the chicken to the pot and rest it on warm for 10 minutes.
  8. Adjust with brine or butter, then serve over potatoes, rice, or noodles with parsley.

Notes

Storage: Refrigerate in airtight containers within 2 hours for up to 4 days. Reheat to 165°F. Freeze in gravy for up to 3 months.
